Gingerbread decorations

I’m a traditional soul when it comes to Christmas decorations and I absolutely love anything home made or natural. Last year I showed you guys my method for drying out orange & lemon slices to hang on the tree, this year I’m making gingerbread decorations you can eat, courtesy of a great recipe on All Recipes. These are great fun to make and really put you in the festive mood! They make your home smell of ginger too, yum!

Gingerbread Decorations Recipe

  • 340g plain flour
  • 110g softened butter
  • 100g brown sugar
  • 190g Golden Syrup
  • 2tsp ground ginger
  • 1tsp cinnamon
  • 1tsp bicarbonate of soda

Pre-heat your oven to 190c. Cream together the sugar & butter in a bowl. Once light & fluffy, add the golden syrup which will make the mixture very thick and sticky. Sift in the flour, spices & bicarbonate of soda. Once fully combined you should have a crumbly dough, work this with your hands to create a smooth ball. Chill in the fridge for 10 minutes then roll out to roughly 7mm thick between sheet of greaseproof paper (rolling out with flour will dry the dough)

Use your cookie cutter of choice! I went for Christmas trees. Using a skewer, make a hole in the top of each biscuit: this is what you will thread the string though to hang on the tree. Now bake your Christmas biscuits for 9 minutes until slightly darker around the edges.

You can now decorate your gingerbread however you like. I mixed up some thick icing and added green food colouring, which I smothered over some and piped an outline on others. Again, you can use whatever sweets & chocolates you fancy to make your biscuits your own creation! I used silver balls, mini smarties & sprinkles. Once they’re dry you can string them up and enjoy your home made Christmas tree decorations!

A little tip: hang these up last in between the gaps of the main decorations. That way, when you start scoffing them you won’t end up with a patchy looking Christmas tree!

Equipment

Ingredients

  • 340 grams flour (plain)
  • 190 grams Golden Syrup
  • 100 grams butter
  • 100 grams brown sugar
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • 1 tsp bicarbonate of soda

Instructions

  • Pre-heat your oven to 190C (375F).
  • In a mixing bowl, combine the sugar and butter and mix until smooth.
  • Mix in the golden syrup.
  • Sift in the flour, spices and bicarbonate of soda, and mix until fully combined.
  • With the crumbly dough, use your hands to press it into a ball. Chill in fridge for 10 mins.
  • Once chilled, roll out between two sheets of greaseproof paper. Aim to get dough 7mm thick.
  • Using a cookie-cutter, cut your shapes out of the dough.
  • Re-roll the dough when needed to get the most cookies out of it.
  • Bake in the oven for 9 minutes, until slightly darker around edges.
  • Decorate to your tastes.
