Easy Lamb Pitas

Here’s a dinner idea that’s easy to make, wholesome and fun to munch! These were great for eating in front of the TV on a Friday night. Even better they’ll be ready to eat in just 20 minutes.

Lamb Pitas

  • Serves 2-3
  • 500g lamb mince
  • 1 bunch of fresh mint
  • Wholemeal pita breads
  • Red pepper hummous
  • Cool tomato salsa
  • 1 small red onion, thinly sliced into rings
  • 1 corn on the cob
  • Small bag of herby salad

If you can find pita breads infused with sun-dried tomato I really recommend them; they’re delicious and really compliment the flavours in this meal.

Finely chop the mint and combine well with the mince. Roughly form the mince into small balls, then pat them down a little. They don’t have to be perfect; the idea is for them to brown up nicely in the frying pan before they’re crumbled into your pita bread.

They’ll take around 4 minutes each side, or until nicely browned. The lamb will lose a lot of fat so oil isn’t required in the pan.

At the same time as the lamb is cooking, lightly oil your corn on the cob and grill. Once cooked and caramelised, cut the corn off the cob and serve in a bowl, along with the salsa, onion & hummus. Serve all components at the table so people can get stuck in and load up their pitas as they please.
