  • 340 grams flour (plain)
  • 190 grams Golden Syrup
  • 100 grams butter
  • 100 grams brown sugar
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • 1 tsp bicarbonate of soda


  • Pre-heat your oven to 190C (375F).
  • In a mixing bowl, combine the sugar and butter and mix until smooth.
  • Mix in the golden syrup.
  • Sift in the flour, spices and bicarbonate of soda, and mix until fully combined.
  • With the crumbly dough, use your hands to press it into a ball. Chill in fridge for 10 mins.
  • Once chilled, roll out between two sheets of greaseproof paper. Aim to get dough 7mm thick.
  • Using a cookie-cutter, cut your shapes out of the dough.
  • Re-roll the dough when needed to get the most cookies out of it.
  • Bake in the oven for 9 minutes, until slightly darker around edges.
  • Decorate to your tastes.
