  • Pre heat your oven to 180c
  • Peel and de-seed your butternut squash, then cut it into thin slices widthways.
  • Add your butternut squash to a large roasting tray, along with the sliced red onion, apple wedges, crushed garlic cloves and sausages.
  • In a mug mix together the olive oil, Worcestershire sauce, wholegrain mustard and mixed herbs. Stir together and then, pour over the ingredients in the tray and mix well until evenly combined.
  • Rearrange the ingredients so that you have an even layer of butternut squash and apple, with the sausages evenly placed on top. Arrange sprigs of rosemary around the tray and then place your sausage tray bake into the oven for 35 minutes.
  • Turn the sausages halfway through cooking so that they brown evenly.
  • Serve with buttered greens.
