Ingredients

  • 120 grams ground almonds (4.2oz)
  • 4 medium-sized eggs
  • 3 tbsp extra virgin olive oil
  • 2.5 tsp baking powder
  • 100 grams blueberries (3.5oz)
  • 50 grams dark chocolate chips (at least 70% cocoa solids)
  • 2 tsp vanilla extract

Instructions

  • Pre-heat your oven to 200 Celsius or 390 Fahrenheit
  • In a mixing bowl combine ground almonds, oil, eggs, vanilla and baking powder.
  • Whisk for 2 minutes.
  • Fold in blueberries and chocolate chips.
  • Grease and line baking tin.
  • Pour in mixture.
  • Bake for 25 minutes.
