Blueberry Keto Cake
A delicious keto cake, using blueberries and dark chocolate to naturally sweeten this guilt-free dessert.

Small cake tin
- 120 grams ground almonds (4.2oz)
- 4 medium-sized eggs
- 3 tbsp extra virgin olive oil
- 2.5 tsp baking powder
- 100 grams blueberries (3.5oz)
- 50 grams dark chocolate chips (at least 70% cocoa solids)
- 2 tsp vanilla extract
Pre-heat your oven to 200 Celsius or 390 Fahrenheit
In a mixing bowl combine ground almonds, oil, eggs, vanilla and baking powder.
Whisk for 2 minutes.
Fold in blueberries and chocolate chips.
Grease and line baking tin.
Pour in mixture.
Bake for 25 minutes.
