It’s November. It’s dark. It’s cold. Time to roast those Winter blues away!
Honey Herb Infused Roast Chicken:
- 3 tsp honey
- 2 tbsp olive oil
- Handful of fresh thyme, chopped.
- 2 tbsp herbs de Provence.
- Salt & pepper
- 1 onion
- 6 cloves of garlic (less if you’re impressing a hot date)
Add all of the above into a mug/small bowl and mix together. Rub the mixture into the skin.
Quarter the onion and place inside the chicken along with the garlic cloves.
Surround the chicken with chopped vegetables like onions, potatoes & carrots and put into the oven at 175 degrees. Roast for roughly 1 hour 30 minutes, depending on the size of your bird.
