Pumpkin Pesto

It is always at this time of year when the days get shorter, the clothes get thicker and the socks get fluffier… that you want the meals to get a little  heartier. It doesn’t get much more hearty than a freshly made dishful of pasta coated with a delicious rich and cheesy sauce.

So when this season comes around are you unsure what to do with your pumpkins? As lovely as they are, let’s try to avoid the familiar go-to pumpkin soup recipes, because Pumpkins can do much more than that I promise you. Let’s instead, make a delicious and seasonal pumpkin pesto. This recipe is rustic, cheesy and best of all very easy. And it is absolutely delicious stirred into your favourite pasta. Let’s do it!

Pumpkin Pesto Recipe

You will need an oven proof dish and a blender for best results with this recipe. Other than that, this pumpkin pesto recipe very hands off and very simple to make. It screams Autumn for me, it is ideal for cooler weather when you crave a rich and comforting meal. This meal goes perfectly with a glass of wine and a fire.

Ingredients

  • Ingredients per person
  • 200g pumpkin, diced
  • 60g feta
  • 2 tbsp pine nuts
  • Glug of olive oil
  • 1 tsp mixed herbs
  • 1/2 tsp nutmeg

Method

To make your pumpkin pesto start by pre-heating your oven to 180c.

In an oven proof dish add your diced pumpkin, feta and pine nuts. Coat these ingredients evenly in the olive oil, mixed herbs and nutmeg and then simply bake in the oven for 30 minutes.

Once the ingredients have baked add them to a blender and blitz until a smooth pesto forms.

And all that is left is to stir your pumpkin pesto into your favourite type of pasta and enjoy.

Ingredients

  • 200 g Pumpkin (culinary), diced

Instructions

  • Pre-heat your oven to 180c

The best pasta to use

This pumpkin pesto recipe will be absolutely delicious with any pasta you fancy. Personally I think pasta shapes with lots of surface area work best because the pumpkin pesto clings better, and so that means more flavour per bite. Besides, you don’t want any of that delicious pesto leftover in the bowl! My favourite pasta to cook with for this pumpkin pesto is Fusilli. Be sure to cook it al dente to it maintains a nice bite. Soggy pasta is a no-no especially with a saucy recipe.

Can you store pumpkin pesto for later?

Yes like most foods you can store this and enjoy at a later date. Be sure to keep it in the fridge in an air tight container and it will be okay for a week. I recommend giving it a good stir before using to ensure that the ingredients haven’t separated as they can do with a fatty based sauce like pesto.

What type of pumpkin to use

It is best to use small culinary pumpkins for cooking, rather than large ones grown for decoration. Smaller pumpkins for cooking purposes are sweeter, easy to prep and better quality for eating. The one’s designed to be turned into lanterns will be extremely bland and tasteless.

Save your seeds

When you have diced the flesh for your pumpkin pesto recipe, don’t waste the seeds in your pumpkin! These can be cleaned up, tossed with a little oil and smoked paprika and then baked in the oven at around 140c until they are lovely and crisp. This makes for a delicious autumnal snack and minimises food waste.

Keep them fresh once toasted in an airtight container in the cupboard.
