It’s Children In Need week and given that I work with (and am myself) a bunch of gannets we organised a little bake off to raise some money. Along with my all time favourite Power Muffins I wanted to try out a simple recipe I’ve seen on YouTube. They’re sweet, light and horribly moreish!
Nutella Rice Crispy treats
- 280g marshmallows
- 100g butter
- 400g rice crispies
- 220g Nutella
Before we start, a word about your puffed rice cereal of choice. Don’t feel like you have to shell out for the real deal: these are getting covered in sugar so no one’s going to know if you buy the supermarket brand. I won’t tell.
Right, so first you need to microwave the marshmallows and butter together for 2 minutes. Marshmallows go WEIRD when they heat up!
Spot the difference? I might have momentarily forgotten that metal & microwaves aren’t friends…
Anyway, next thing you have to do is stir in the rice crispies.
Then spread them out in a nice thin rectangle on some greaseproof paper.
Nutella time! Warm it in the microwave for 30 seconds. You want it soft but not mega runny, otherwise it will just seep right through all the gaps in the rice crispies. You also want to leave a 2 inch gap around the edges, meaning when you roll it up the Nutella won’t spill out.
Now roll up the whole thing, using the greaseproof paper as a support. Finally wrap it all up nice and tight to chill in the fridge for an hour.
When it’s time, use a sharp, non-serrated knife and these will chop into slices like a dream!
The swirl isn’t as defined as I’d hoped but it gives a really delicious, rich taste throughout the light cereal mix. I thought the portions were actually pretty huge so I ended up cutting them in half.
…I soon learnt I should have left them whole, seeing as everyone went back for seconds!
