Garlic Chilli Chicken

A recent event has inspired me to develop a delicious garlic chilli chicken recipe. In Spring 2022 I created a TikTok which sparked a lot of conversation around garlic. Until that day I thought there was just one opinion that could be had on garlic – that unless you were a vampire it was bloody delicious. How wrong I was! I never knew there could be so many garlic haters out there?!

Could never be me. Or you either I am guessing, if you have found your way to this recipe. So my fellow garlic lovers, get ready for a deliciously garlicky and enjoyable curry to make at home.

Garlic Chilli Chicken Recipe

This is an Indian inspired dish. My version of course has garlic front and centre stage and a tasty tomato base. This garlic chilli chicken recipe is perfect for mid-week meals and batch cooking. It is also a really simply recipe which gains its flavour from the richness of chicken thighs (chicken breast won’t deliver nearly as much flavour for this recipe) the hum of the garlic and kick from the chillis. No need to write a big shopping list for this recipe, making it even more convenient.

Garlic Chilli Chicken Curry

Ingredients

  • Serves 4
  • 8 chicken thighs, diced
  • 1 tbsp curry powder
  • 8 garlic cloves, minced
  • 2 tbsp tomato paste
  • 400ml chicken stock
  • 2 green chillis, deseeded and chopped
  • Fresh coriander to garnish

Method

This garlic chilli chicken recipe could not be easier!

In a large pan on medium heat, add some oil and allow to heat up. Now add to the pan the diced chicken and once it hard started to brown a little add the curry powder, minced garlic and season well with salt and pepper.

Continue to cook until the chicken is looking evenly cooked on the outside, then add the tomato paste, chicken stock and chillis. Reduce the heat a little and simmer for 10 minutes until the liquid has reduced to a thickened sauce.

Serve with a garnish of fresh coriander and serve with fluffy basmati rice.

FAQs

Can I use either fresh or prepped garlic?

I am a big fan of pre prepared garlic for quick and easy meals where peeling garlic cloves might be too much faff in a limited space of time. BUT I do also believe that fresh is best and you really cannot beat the depth of flavour that fresh garlic cloves bring. Given that garlic is the star ingredient for garlic chilli chicken… I really recommend taking the time to peel and use fresh garlic for this recipe.

Is garlic chilli chicken hot?

As the name of the recipe would suggest, yes! Traditional North Indian garlic chilli chicken is hot and spicy. But the beauty of spice is that you can totally tailor it to your own preference. This recipe calls for 2 green chillis. If you like it even hotter then leave the seeds in. If you like it milder then try just one or even half a chilli.

You can also temper the heat of a hot curry with a cooling raita. Regardless of heat I adore raita with any curry dish! A quick and easy raita style sauce can be as simple as mixing up some Greek or natural yoghurt, finely chopped cucumber and a squeeze of lime.

Is garlic chilli chicken healthy?

This is a common question I get for dishes that I suggest for mid week meals. The thing is, healthy is a very vague term which means different things to different people. I can tell you the facts, which are that this garlic chilli chicken recipe is rich in protein and made with a tomato base which is less calorific than creamy curry dishes. It’s all fresh ingredients made from scratch and in my books, that makes a healthy meal.

Interestingly, garlic is actually meant to hold a number of health properties. The main active ingredient in garlic is allicin which some studies have suggested helps to reduce blood sugar, cholesterol and blood pressure. What can I say? Vampires are missing out.
