Festive Rocky Road

Rocky road is like the pasta & sauce of the baking world: it’s what you go to when you want something quick and easy. I put a simple festive twist on this classic with the addition of mixed dried fruit.

Ingredients:

  • 360g bar of Cadbury milk chocolate
  • 70g unsalted butter
  • 2 generous handfuls of mini marshmallows
  • 8 digestive biscuits (bashed into big crumbs & chunks)
  • 1 handful of mixed dried fruit.

The most difficult part of rocky road is melting the chocolate… and not eating all the chocolate. Just split it into squares and drop into a pot with the butter, over another bowl of boiling water. Don’t heat over a direct flame! You’ll burn your chocolate, and that would be very sad indeed.

Once your chocolate is melted? Well, you just throw those mallows, biscuits and fruity bits right on in there and stir it up!

Spread out onto a greased baking tray and put in the fridge until hard.

Once chilled you can cut it into squares; I LOVE this bit, crunching your knife through those biscuits is soooo satisfying.

Quick, crowd pleasing recipes like these are life savers for Christmas. Firstly it’s going to keep those annoying kids that come to visit quiet. But it’s also a great emergency present to make in advance, so no worries when Jean from the office surprises you with a gift and all you’ve done is bitch about her by the coffee machine.
