Cheesy Garlic Bread (with a twist)

by Jo Kenny

Who doesn’t love garlic bread? And this version will be such a perfect side to your dishes. It’s beautifully garlicky of course, but this is a cheesy garlic bread recipe topped with mature cheddar as well as some fun twists.

This cheesy garlic bread is absolutely perfect with pasta dishes, I made this one night with a delicious mushroom ravioli I had made and it paired so well. I especially loved dunking that cheesy garlic bread into the parmesan cream sauce I had made. I have a weird obsession for bread and sauce. It’s just so good, right?!

Cheesy Garlic Bread Recipe

So by impulse (I must have had a sweet tooth the evening that I made this) I decided to try drizzling my cheesy garlic bread with some honey, and oh wow was it good! An injection of sweetness works so well. I usually plump for balsamic vinegar or even better, balsamic glaze. But on this occasion i tried a new twist with honey and it was divine.

Ingredients

  • Serves 4
  • 1 medium fresh white baguette
  • 70g salted butter, softened
  • 4 garlic cloves, minced
  • Handful of fresh parsley, finely chopped
  • 2 tbsp runny honey
  • 40g extra mature cheddar, grated

Method

Preheat your oven to 180c.

Use a bread knife to slice your baguette in half lengthways and open it up. In a bowl, use a fork to mash together the softened butter, minced garlic and parsley, and season well. Mix this up until the ingredients are evenly combined throughout the butter.

Spread this generously onto your bread, making sure to get right to the edges.

Now drizzle your honey over the bread and top with the extra mature cheddar.

Place your cheesy garlic bread onto a baking tray and cook in the oven for 20 minutes, until the cheese has melted and the bread is nice and crisp.

How much cheese?

I almost didn’t put a measurement for cheese for this recipe, because some things should be measured with your heart and in this case, cheese should be just that. I enjoy a more delicate cheesy garlic bread, especially when served alongside homemade pasta dishes so that the garlic bread isn’t quite so brutish against more delicate flavours in the main dish. However, sometimes that real filthy, ultra cheesy garlic bread really has its place.

So depending on your mood, load that cheese up as much or a little as you like. I would say, if you’re planning a really thick layer of cheese for your garlic bread then be sure to add a little more honey to ensure that the sweetness is coming through. You don’t want to miss out on that honey hit, it’s a total game changer!

No matter what, do make sure that you use a nice quality strong cheddar for that richness.

Ideas to serve cheesy garlic bread

Cheesy garlic bread I’m sure we’d all agree is delicious and substantial enough that we’d happily sit and devour the lot on it’s own. It is of course designed to be a side however! When I devised this cheesy garlic bread with a twist I enjoyed it with some delicious homemade ravioli and loved every moment of dunking it into the creamy parmesan sauce I had made.

Garlic bread is one of those side dishes that you can pretty much add to any meal and it will be openly accepted by those eating and will compliment what it is eaten with.

  • Soups – elevate soup by dipping this cheesy garlic bread in, especially delicious with some homemade tomato soup.
  • Salads – a delicious side to cool and creamy style salads.
  • BBQs – of course cheesy garlic bread is absolute magic when it makes its way onto a BBQ spread.
  • Sandwich – Feeling indulgent? Make an immense garlic bread sandwich by folding over and adding deli meats and tomatoes. (Does that sound like incredible hangover food or what)
  • Croutons – cut your cheesy garlic bread up into small cubes and it becomes a delicious addition into your salad rather than on the side.
