Raspberry Roulade

Yesterday I made lamb for the family. My mum, not wanting to fully relinquish control of the kitchen said she’d bring dessert. I thought it was going to be one of the classics in her artillery: trifle, fruit salad, pie… So I was pretty excited when she arrived with an intriguing mystery package all wrapped up in brown paper! I unwrapped it to find a spectacular looking, 100% home made raspberry roulade.

And the source of this little triumph? None other than the nation’s sweetheart of sweet treats: Mary Berry! I’ve been assured that this dessert is a doddle and can be made in 20 minutes! You can find the recipe on the BBC website. This one calls for strawberries, but you can substitute for any fruit you like really.

I was pretty shocked to find out there’s a whopping 10oz of sugar in this dessert, but despite that it’s surprisingly unsickly, the opposite in fact: super light, fluffy meringue with a fresh swirl of cream and fruit.

I was most shocked that we polished off the entire thing :-O

Oh that looks sooo good, roulade is possibly one of my favourite desserts. I love when my mum gets the ice cream maker out because her ice cream recipes all demand egg yolks, and because she hates waste we invariably end up with roulades, pavlovas and meringues because she can’t bear to throw away the whites!
