Hands up if you love these? Me too! But I begrudge paying for a tiny, albeit delicious snack that comes at a premium price. Checking out the back of the bar and seeing what goes into it, I couldn’t help but feel like I could just do it myself for cheaper.
Nakd have ever so helpfully added the percentages of ingredients. I chose to leave out the cocoa, purely because I don’t think it tastes that great with the fruit.
Pressed Fruit & Nut Bars
- 100g dates
- 60g cashews
- 40g raisins
Put these three ingredients into a food processor and blend it up for 3-5 minutes. When it’s ready, the fruit & nut pieces should resemble the size of grit.
Pour the mix out onto greaseproof paper, press and roll it together until it is a very compact ball.
Put another sheet of greaseproof paper on top and roll out the mix into half inch thick rectangle. Use a sharp knife to neaten the edges.
Chill this for 30 minutes, then cut into bar portions. Your delicious fruity snacks are done!
Making these was disgustingly easy. Three ingredients, no baking and prep was well under 10 minutes. Even if I do say so myself, I think the home made fruit & nut bars look more appetising than Nakd bar.
The taste test confirmed it for me: home made is better! Once these bars have chilled for a bit they have a wonderful chewiness that’s really satisfying when teamed with the sweetness of the fruit and the bite of the cashews. These bars are made from 100% natural whole foods and make a much more interesting snack than trail mix. Even better, with Nakd bars priced at 75p in Tesco, my home made bars (using branded ingredients) work out at 39p each.
