Fruity Protein Pancakes

Making new discoveries in the kitchen always makes me happy; I love expanding my arsenal of recipes! One of the best things to discover is healthy alternatives to foods that in their traditional form are indulgent. Stripping a dish of its guilt is so very satisfying. Today, we’re talking guilt free pancakes.

Healthy pancake alternatives have been taking the internet by storm recently so I was really eager to try my hand. Research bombarded me with endless combinations and methods, but in the end I wanted to make a recipe that’s simple and quick. I’ve devised my own recipe for super speedy, super easy pancakes that are insanely tasty. Even better, they’re packed with protein and fruity goodness. Make these babies for your breakfast and both your taste buds and your body will thank you.

Fruity Protein Pancakes

  • Makes 6 pancakes
  • 3 bananas (not too ripe)
  • 3 eggs
  • 1 scoop of whey protein powder
  • 100g blueberries
  • 1/2 tsp baking powder
  • To serve: fresh berries of your choice and honey

Peel and slice the bananas into a bowl and add the eggs. Using an electric whisk blend until smooth. Add the baking powder and protein powder and whisk for 1 minute on a high speed: you want to get plenty of air into the batter for lovely, fluffy pancakes. Heat a frying pan on medium heat and lightly grease, I use raw coconut oil. Use a ladle to measure out a spoonful into the pan. Sprinkle over some blueberries and cook for 1 minute each side.The pancakes will go a rich brown on the outside, but stay lightly golden inside.

These pancakes are so fantastic! I really enjoyed them and love how light and fluffy they are. Rich in protein and fibre they’re nice and filling, despite having no stodgy flour in them. What a dream! Quality whey protein is quite important for this recipe, I suppose it acts as the binding agent for the wet ingredients. I use My Protein which comes in every flavour you could imagine, my recipe uses strawberry.
