This hearty little number took about 15 minutes to make. Perfect comfort food in no time at all!
- 1 pack of chestnut mushrooms, thinly sliced
- 150ml chicken stock
- 2 chicken breasts, diced (optional)
- 75ml single cream
- 1 large white onion, diced
- 2 springs fresh rosemary, finely chopped
- 1 garlic clove, minced
- knob of butter
Tip: You can make your own incredible chicken stock by simmering a chicken carcass with a jug of water in a slow cooker overnight.
Start by frying your onions & mushrooms in a pot with the butter, leave to sweat until soft. Then add your chicken, rosemary, garlic & seasoning. Once the chicken has cooked add the chicken stock and boil for 5 minutes. Finally, reduce the heat, stir in the cream and leave to simmer for a few more minutes.
Have on it’s own for a lighter meal, or for extra comfort factor tuck in with a hunk of crusty soda bread.
