I am a firm believe that ginger biscuits are not just for Christmas. But then again I do love ginger. I got the idea for these when I was at a party on the weekend. After dinner, a big selection of cookies were brought out and whilst everyone else was diving in for the double choc chip cookies, I was eyeing up the oat & raisin ones. Obviously I love all cookies (duh) but I really like the rustic gnarly ones, the kind you could imagine a farmer’s wife whipping up!
